Ingredients

  • 1 lb bacon
  • 1.5 lbs boneless skinless chicken thighs
  • 1 medium green pepper
  • 2 medium sweet onions
  • 4 chipotle peppers
  • 42 ounces diced tomatoes
  • 8 ounces tomato paste
  • 2 cups beef broth
  • 15 ounces (1 can) black beans
  • 15 ounces (1 can) kidney beans
  • 15 ounces (1 can) canned sweet corn
  • 6 Tbsp Doc Jimmy’s Seasoning

Instructions

  1. Prep the ingredients: Start by cutting the bacon into small strips across the short end. Dice the onions and green pepper, and chop the chipotle peppers.
  2. Load the slow cooker: Add the bacon, chicken thighs, beef broth, diced tomatoes, tomato paste, chipotle peppers, and 4 tablespoons of Doc Jimmy’s Seasoning to your 6-quart slow cooker.
  3. Slow cook to perfection: Place the lid on the slow cooker and cook on low for at least 8 hours. This slow, gentle cooking process allows the flavors to meld beautifully.
  4. Optional: After cooking, you can remove some of the bacon grease from the top if desired.
  5. Shred the chicken: Remove the chicken thighs from the slow cooker, shred them using two forks, and return the shredded chicken to the pot.
  6. Add the finishing touches: Stir in the black beans, kidney beans, sweet corn, and the remaining 2 tablespoons of Doc Jimmy’s Seasoning. Continue cooking on low for at least another hour to let the flavors deepen and the ingredients meld together.
