- 2 cups beef broth
- 15 ounces (1 can) black beans
- 15 ounces (1 can) kidney beans
- 15 ounces (1 can) canned sweet corn
- 6 Tbsp Doc Jimmy’s Seasoning
Instructions
- Prep the ingredients: Start by cutting the bacon into small strips across the short end. Dice the onions and green pepper, and chop the chipotle peppers.
- Load the slow cooker: Add the bacon, chicken thighs, beef broth, diced tomatoes, tomato paste, chipotle peppers, and 4 tablespoons of Doc Jimmy’s Seasoning to your 6-quart slow cooker.
- Slow cook to perfection: Place the lid on the slow cooker and cook on low for at least 8 hours. This slow, gentle cooking process allows the flavors to meld beautifully.
